A recent case has highlighted the importance of accurate traceability records.
The food business owner was prosecuted for selling beef advertised as lamb. The owner blamed the supplier however, the receipts did not specify the type of meat purchased. This is a lesson for food business owners. It’s not enough to allow a supplier to just write “meat” on a receipt. The type of meat purchased must be specified e.g. lamb, beef etc. Specific and accurate records will be of great assistance to any food business in the event of any irregularities.
